Piernik (Polish honey spice cake)
Ingredients:
1 cup sugar
1/4 cup water
1/2 pound honey ++
or 1/4 c honey and 1/4 c molasses
2 tsp allspice, 2010 heaping
1 tsp cinnamon, 2010 heaping
1/2 tsp cloves, 2010 1 tsp
1/2 tsp nutmeg, 2010 1 tsp
2010/11 1/2 tsp black pepper, optional
4 tsp margarine
4 cups flour
1 egg
2 tsp baking soda
1/3 cup water

Procedure:
To make dough:
1. Brown 2 tbs sugar in a saucepan.
2. Add 1/4 cup water and stir till dissolved.
3. Add the rest of the sugar, honey, spices, and margarine.
4. Bring to a boil stirring.
5. Remove from heat, cool.
6. Add the flour, the egg, baking soda, and about 1/3 cup water.
7. Knead the dough for a few minutes.
8. Cover and let stand for 20 minutes.
9. Roll out the rectangle (about 1/8")on a floured board cut into shapes put on a cookie sheet.
Or with parchment paper on the cookie sheet.
10. Spread dough with egg yolk.
11. Bake in a moderate 350 degree oven for 15 minutes.

This is a traditional old Polish recipe.
I use the same dough to make a piernik with a chocolate filling inside.
2010 were my changes to the original recipe.

Serves: 6-8 people
