Italian Tomato Sauce With Gravy Meat

Garlic Paste Ingredients:
1/3 Cup olive oil
1 - 1.5 Cups peeled garlic cloves
2 onions, peeled
1 - 1.5 Cups grated Romano or Parmesan grated cheese
1 bunch fresh basil
1 bunch parsley
1/2 Cup Italian seasonings

Garlic Paste Procedure:
1. Saute garlic in olive oil for about 10 minutes, stirring occasionally,
until soft.
2. put garlic, olive oil, and all remaining ingredients in food processor,
and puree.
3. Prepare brasciole by spreading thin layer of paste over them.
4. Roll up each brasciole like a jelly roll and skewer with round tooth picks.
5. Set aside remaining garlic paste.

Main Ingredients:
8 - 29 oz. cans tomato puree
3 pounds ground beef
3 pounds hot or sweet Italian sausages
2 pounds brasciole
3 pounds chicken legs
2 pounds kielbassa
8 eggs, well beaten
24 oz. Italian flavored bread crumbs (most of a can)
2 Tbsp fennel seeds
2 loaves fresh Italian bread

Cooking Procedure:
1. Prepare garlic paste and brasciole.
2. Brown brasciole in olive oil in pan,  set aside.
3. Brown sausages in olive oil in pan, set aside.
4. Beat all eggs.
5. Add egg mixture to ground beef along with 1/3 Cup garlic paste.
6. Knead in bread crumbs into ground beef mixture until a good texture for
forming meat balls is attained.
7. Roll out meat balls about 2 inches in diameter, or as desired size.
8. Brown meat balls in olive oil in pan, set aside.
9. Brown chicken legs in olive oil in pan, set aside.
10 Divide tomato puree and remaining garlic paste between two large pots,
aprocximately 12 quarts each.
11. Add half of fennel seeds to each pot, dividing equally between pots.
12. Add about 2 Cups of water or red wine to each pot to thin out sauce.
13. If using both hot and sweet Italian sausages, cut one or other in half,
so one can tell which one is which.
14. Add all meat to pots except chicken, dividing equally between pots.
15. Simmer several hours on low heat.
16. Add chicken legs to one of the pots about an hour before
sauce is desired to be done.
17. Pour tomato sauce over your favorite pasta or anything else.
18. Place cooked meat on fresh Italian bread to eat as meat ball heros.
19. Eat and enjoy!!!
20. Add about 2 cups of tomato sauce to freezer bags, seal and freeze.

Quantity:
Makes about 16 quarts of tomato sauce.
